Description

This Cheesy Cream Cheese Corn Casserole is the ultimate comfort-food side dish rich, velvety, and packed with sweet corn flavor in every bite. Cream cheese and cheddar melt together to create a luscious base, while a buttery cracker topping bakes into a crisp, golden crust. It’s effortless, crowd-pleasing, and perfect for holidays, potlucks, family dinners, or any cozy meal where you want something warm and satisfying on the table.

Ingredients

Scale

Corn Mixture

  • 2 cans (15 oz each) sweet corn, drained
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • ¼ cup milk
  • ¼ cup sugar
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt & pepper, to taste

Topping

  • ½ cup crushed buttery crackers (like Ritz)
  • 2 tbsp melted butter

Instructions

  1. Preheat Oven
Preheat your oven to 350°F (175°C). Grease an 8×8 or 9×9 baking dish and set aside.
  2. Make the Corn Base
In a large bowl, mix the cream cheese, sour cream, milk, sugar, garlic powder, onion powder, salt, and pepper until smooth. Stir in corn and cheddar cheese until fully coated.
  3. Spread Into the Baking Dish
Pour the creamy corn mixture into your prepared dish and smooth out the top.
  4. Prepare the Topping
Combine the crushed buttery crackers with melted butter. Sprinkle the mixture evenly on top of the casserole.
  5. Bake
Bake for 25–30 minutes, or until the edges are bubbly and the topping is perfectly golden.
  6. Serve
Let rest for 5 minutes before serving. Enjoy warm with your favorite main dishes!

Notes

  1. Cream cheese blends easiest when softened let it sit at room temperature 20–30 minutes before mixing.
  2. If your casserole looks too thick, add 1–2 tablespoons extra milk to loosen the mixture before baking.
  3. For a crispier topping, broil the casserole for 1–2 minutes at the end, watching closely so it doesn’t burn.
