- 1/2 cup diced tomatoes

- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 1 teaspoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions
- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese until well blended.
- Add the black beans, corn, diced tomatoes, red onion, cilantro, jalapeño, lime juice, chili powder, cumin, salt, and pepper to the cheese mixture. Stir until all ingredients are evenly incorporated.
- Shape the mixture into a log or ball, then wrap it tightly in plastic wrap. Refrigerate for at least 2 hours to allow the flavors to meld and the cheese log to firm up.
- Once chilled, remove the cheese log from the refrigerator and unwrap it. If desired, roll the log in additional chopped cilantro or diced tomatoes for added color and flavor.
- Serve the cheese log with tortilla chips for dipping.
