Description

These French Dip Tortilla Roll-Ups turn everyone’s favorite deli-style sandwich into a fun, bite-sized appetizer. Warm flour tortillas are packed with savory roast beef and melty cheese, brushed with garlicky butter, and baked until golden.   • 1 lb deli roast beef, thinly sliced
  • 2 cups shredded provolone or mozzarella cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley (optional)
  • Salt and pepper, to taste
  • For Dipping: 2 cups beef au jus (prepared from packet or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Lay the flour tortillas flat on a clean work surface or cutting board.
  3. Evenly layer the sliced deli roast beef over each tortilla, leaving a small border around the edges.
  4. Sprinkle a generous amount of shredded provolone or mozzarella cheese over the roast beef on each tortilla.
  5. Starting from one edge, tightly roll each tortilla up like a burrito, tucking in the sides if desired to hold the filling in.
  6. If you like, slice each rolled tortilla into 1½–2-inch pinwheels. Or leave them whole as long roll-ups for easier dipping.
  7. In a small bowl, stir together the melted butter, garlic powder, onion powder, dried parsley (if using), and a pinch of salt and pepper.
  8. Arrange the roll-ups seam-side down on the prepared baking sheet. Brush the tops and sides with the seasoned melted butter mixture.
  9. Bake for 12–15 minutes, or until the tortillas are golden brown and crispy on the edges and the cheese is melted and bubbly.
  10. For extra crispiness, switch the oven to broil for 1–2 additional minutes, watching carefully so they don’t burn.
  11. While the roll-ups bake, warm the beef au jus in a small saucepan over medium heat until hot but not boiling. Keep warm on low.
  12. Serve the French Dip Tortilla Roll-Ups hot with bowls of warm au jus on the side for dipping. Enjoy right away.
