These French Dip Tortilla Roll-Ups turn everyone’s favorite deli-style sandwich into a fun, bite-sized appetizer. Warm flour tortillas are packed with savory roast beef and melty cheese, brushed with garlicky butter, and baked until golden. - 1 lb deli roast beef, thinly sliced
- 2 cups shredded provolone or mozzarella cheese
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley (optional)
- Salt and pepper, to taste
- For Dipping: 2 cups beef au jus (prepared from packet or homemade)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Lay the flour tortillas flat on a clean work surface or cutting board.
- Evenly layer the sliced deli roast beef over each tortilla, leaving a small border around the edges.
- Sprinkle a generous amount of shredded provolone or mozzarella cheese over the roast beef on each tortilla.
- Starting from one edge, tightly roll each tortilla up like a burrito, tucking in the sides if desired to hold the filling in.
- If you like, slice each rolled tortilla into 1½–2-inch pinwheels. Or leave them whole as long roll-ups for easier dipping.
- In a small bowl, stir together the melted butter, garlic powder, onion powder, dried parsley (if using), and a pinch of salt and pepper.
- Arrange the roll-ups seam-side down on the prepared baking sheet. Brush the tops and sides with the seasoned melted butter mixture.
- Bake for 12–15 minutes, or until the tortillas are golden brown and crispy on the edges and the cheese is melted and bubbly.
- For extra crispiness, switch the oven to broil for 1–2 additional minutes, watching carefully so they don’t burn.
- While the roll-ups bake, warm the beef au jus in a small saucepan over medium heat until hot but not boiling. Keep warm on low.
- Serve the French Dip Tortilla Roll-Ups hot with bowls of warm au jus on the side for dipping. Enjoy right away.
