  • 200 g rolled oats
  • 2 grated apples
  • 2 grated carrots
  • 3 eggs
  • 100 ml coconut oil
  • 150 g honey or agave syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • A pinch of salt
  • Chopped walnuts (optional, for decoration)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a cake pan.
  2. In a large bowl, mix the oats with the grated apples and carrots.
  3. In another bowl, beat the eggs and add the coconut oil and honey or agave syrup, mixing until smooth.
  4. Add the wet mixture to the bowl with the dry ingredients. Stir in the cinnamon, baking powder, and salt. Mix well until all ingredients are fully combined.
  5. Pour the batter into the greased pan and smooth the top with a spatula.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it rest for a few minutes before unmolding. Decorate with chopped walnuts if desired.
