- 2 grated apples
- 2 grated carrots
- 3 eggs
- 100 ml coconut oil
- 150 g honey or agave syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- A pinch of salt
- Chopped walnuts (optional, for decoration)
Instructions
- Preheat the oven to 180°C (350°F) and grease a cake pan.
- In a large bowl, mix the oats with the grated apples and carrots.
- In another bowl, beat the eggs and add the coconut oil and honey or agave syrup, mixing until smooth.
- Add the wet mixture to the bowl with the dry ingredients. Stir in the cinnamon, baking powder, and salt. Mix well until all ingredients are fully combined.
- Pour the batter into the greased pan and smooth the top with a spatula.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let it rest for a few minutes before unmolding. Decorate with chopped walnuts if desired.
