- 2 cups pecans, finely chopped
- 1 ½ cups self-rising flour
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 1 cup vegetable oil
- 4 large eggs, beaten
- ½ cup honey
- 2 teaspoons vanilla extract
- ½ teaspoon salt (optional, balances sweetness)
- Honey Butter Glaze
- ½ cup butter (1 stick)
- ¼ cup honey
- ¼ cup brown sugar
Instructions
- Preheat oven to 325°F (165°C).
- Grease and flour two 9×5-inch loaf pans (or one large Bundt pan).
- In a large bowl, combine flour, granulated sugar, brown sugar, and pecans.
- Stir in oil, eggs, honey, vanilla, and salt (if using). Mix just until combined—do not overmix.
- Pour batter into prepared pan(s).
- Loaf pans: bake 60–70 minutes; Bundt pan: bake 75–85 minutes. A toothpick inserted in the center should come out mostly clean.
- In a small saucepan over medium heat, melt butter. Stir in honey and brown sugar. Simmer 2–3 minutes until smooth.
- While bread is still warm, poke small holes on top with a skewer and slowly pour the glaze over the bread.
- Let cool at least 30 minutes before slicing.
