Ingredients

  • 2 cups pecans, finely chopped
  • 1 ½ cups self-rising flour
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup vegetable oil
  • 4 large eggs, beaten
  • ½ cup honey
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt (optional, balances sweetness)
  • Honey Butter Glaze
  • ½ cup butter (1 stick)
  • ¼ cup honey
  • ¼ cup brown sugar

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Grease and flour two 9×5-inch loaf pans (or one large Bundt pan).
  3. In a large bowl, combine flour, granulated sugar, brown sugar, and pecans.
  4. Stir in oil, eggs, honey, vanilla, and salt (if using). Mix just until combined—do not overmix.
  5. Pour batter into prepared pan(s).
  6. Loaf pans: bake 60–70 minutes; Bundt pan: bake 75–85 minutes. A toothpick inserted in the center should come out mostly clean.
  7. In a small saucepan over medium heat, melt butter. Stir in honey and brown sugar. Simmer 2–3 minutes until smooth.
  8. While bread is still warm, poke small holes on top with a skewer and slowly pour the glaze over the bread.
  9. Let cool at least 30 minutes before slicing.
