  • 1/2 cup feta cheese, crumbled

    For the Dressing :
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper

Instructions

  1. Prepare the salad base:
    Add chickpeas, tomatoes, cucumber, bell pepper, red onion, olives, feta, parsley, and mint to a large bowl.
  2. Make the dressing:
    In a small bowl or jar, whisk together olive oil, lemon juice, red wine vinegar, Dijon, garlic, oregano, salt, and pepper.
  3. Combine:
    Pour the dressing over the salad and toss gently until everything is evenly coated.
  4. Chill (optional):
    Let the salad sit for 20–30 minutes for flavors to meld, or serve immediately.

Notes
