- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup whole milk
- 1 1/2 cups chopped pecans
- 1 1/2 cups boiling water
- 1 cup brown sugar, packed
- 1/2 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, whisk together the corn syrup, brown sugar, melted butter, vanilla extract, and salt. Add the eggs, one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour and baking powder. Gradually add the flour mixture to the wet ingredients, alternating with the milk, until just combined.
- Fold in 1 1/2 cups of chopped pecans. Pour the batter into the prepared baking dish.
- Sprinkle the remaining 1 cup of brown sugar and 1/2 cup of chopped pecans over the top of the batter. Carefully pour the boiling water evenly over the entire cobbler (do not stir).
- Bake for 40-45 minutes, or until the top is golden brown and the edges are bubbling. Allow the cobbler to cool for 10 minutes before serving.
Notes
