Description

This Pineapple Cream Cheese Cobbler is a golden, bubbly, irresistibly cozy dessert that combines tropical sweetness with rich, creamy pockets of melt-in-your-mouth goodness. With a buttery base, a simple pour-over batter, juicy pineapple chunks, and tender bursts of cream cheese, this cobbler bakes into a beautifully layered treat that practically makes itself. Perfect for gatherings, potlucks, or just an easy anytime dessert, it’s pure comfort with a bright fruity twist.

Ingredients

Scale
  • 1 stick (1/2 cup) butter
  • 1 egg, lightly beaten
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cans (20 oz each) pineapple chunks, drained
  • 8 oz cream cheese, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the butter in a 9×13-inch glass baking dish and place it in the oven to melt. Once melted, remove from the oven.
  3. In a mixing bowl, combine the egg, milk, flour, sugar, baking powder, and salt. Whisk until smooth.
  4. Pour the batter directly over the melted butter without stirring this creates the classic cobbler layering effect.
  5. Add the pineapple chunks on top, spreading them into an even layer as best as possible.
  6. Drop the cream cheese pieces evenly over the pineapple.
  7. Bake for 45 minutes, or until the top is golden brown, the edges are bubbling, and the center is set.
  8. Let cool slightly and serve warm plain or topped with whipped cream or vanilla ice cream.

Notes

  1. Do not stir the batter into the butter the separated layers create the cobbler’s signature rise and golden top.
  2. If your pineapple is very juicy, blot slightly with paper towels to prevent excess moisture in the cobbler.
  3. Cream cheese softens and melts into little creamy pockets cut the cubes small for even distribution.
  4. Glass baking dishes brown more evenly for cobblers, so stick to glass if possible.
