Ingredients

Scale
  • 1 can chickpeas (15 oz), drained and rinsed
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the maple syrup, Dijon mustard, soy sauce, garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper (if using).
  3. Add the drained chickpeas to the bowl and toss them gently in the maple glaze until fully coated.
  4. Spread the chickpeas evenly on the prepared baking sheet and drizzle with olive oil.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the chickpeas are golden and slightly crispy on the outside.
  6. Remove from the oven and let cool for a few minutes. They will continue to crisp up as they cool.
  7. Garnish with freshly chopped parsley before serving. Enjoy your sweet and spicy chickpea bites as a delicious appetizer or snack!

Notes

  • For extra crispiness, allow the chickpeas to dry completely before coating them in the glaze.
  • These chickpea bites can be stored in an airtight container for up to a week.
  • Adjust the amount of cayenne pepper to suit your taste preferences for spiciness.
