Ingredients

Scale

For the Slaw

  • 4 cups shredded carrots (about 45 medium carrots)
  • 1/2 cup red cabbage, thinly sliced (optional, for color & crunch)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced

For the Dressing

  • 3 tbsp fresh orange juice
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp freshly grated ginger
  • 2 tbsp olive oil or neutral oil
  • 1/4 tsp salt (or to taste)
  • 1/8 tsp black pepper

Optional Toppings

  • Toasted sesame seeds
  • Chopped nuts (cashews, peanuts, or almonds)
  • Thinly sliced red chili for heat

Instructions

  1. Prepare the slaw:
In a large bowl, combine shredded carrots, red cabbage (if using), cilantro, and green onions.
  2. Make the dressing:
In a small bowl or jar, whisk together orange juice, lemon juice, lime juice, honey, grated ginger, olive oil, salt, and pepper until emulsified.
  3. Toss:
Pour the dressing over the carrot mixture and toss until everything is evenly coated.
  4. Chill (optional):
For best flavor, let the slaw sit in the fridge 15–30 minutes to allow flavors to meld.
  5. Serve:
Sprinkle with optional toppings like sesame seeds or nuts before serving.

Notes

  1. For the best texture, shred the carrots yourself instead of using pre-shredded they hold their crunch better and taste fresher.
  2. Always taste the dressing before tossing. Citrus levels vary, so adjust the honey or salt to balance things perfectly.
  3. If preparing ahead, keep the toppings separate until serving to maintain crunch and prevent sogginess.
