Description

Cowboy Caviar Cream Cheese Pinwheels are a colorful, creamy, and flavor-packed appetizer inspired by the fresh ingredients of classic cowboy caviar. Each soft flour tortilla is filled with seasoned cream cheese, black beans, sweet corn, juicy tomatoes, crunchy vegetables, fresh cilantro, and a bright splash of lime juice.

  • 1 package (8 ounces) cream cheese, softened
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • ½ cup diced red onion
  • ½ cup diced bell pepper, any color
  • ¼ cup fresh cilantro, finely chopped
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste

Instructions

  • Place the softened cream cheese in a medium mixing bowl and stir until smooth and easy to spread.
  • Add the black beans, corn, diced tomatoes, red onion, bell pepper, cilantro, lime juice, chili powder, salt, and black pepper.
  • Gently mix until all the vegetables are evenly coated with the seasoned cream cheese. Avoid overmixing so the beans and vegetables maintain their texture.
  • Lay one flour tortilla flat on a clean work surface.
  • Spread a generous, even layer of the cream cheese mixture over the tortilla, leaving a small border around the edges to prevent the filling from spilling out.
  • Starting from one side, roll the tortilla tightly into a log. Repeat with the remaining tortillas and filling.
  • Wrap each tortilla roll tightly in plastic wrap and refrigerate for at least 30 minutes. Chilling helps the filling firm up and makes the pinwheels easier to slice.
  • Remove the rolls from the refrigerator and unwrap them. Using a sharp knife, trim the uneven ends and slice each roll into approximately 1-inch pieces.
  • Arrange the Cowboy Caviar Cream Cheese Pinwheels on a serving platter and serve chilled.

Notes

  • Drain the beans, corn, and tomatoes thoroughly before adding them to the filling. Excess moisture can make the tortillas soggy and cause the filling to leak.
  • The cream cheese should be fully softened before mixing. Cold cream cheese will be difficult to combine evenly with the vegetables.
  • Roll the tortillas firmly but gently. A tight roll helps the pinwheels hold their shape, but pressing too hard may push the filling out of the sides.
