  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce, divided
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 small flour tortillas
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, 1/2 cup enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper. Mix until well combined.
  3. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  4. Take a tortilla, fill it with about 1/4 cup of the chicken mixture, and roll it up tightly. Place seam-side down in the baking dish. Repeat with the remaining tortillas.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  6. Cover the dish with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Let cool for a few minutes, garnish with fresh cilantro if desired, and serve with sour cream on the side.

  • For an extra kick, add sliced jalapeños to the chicken filling.
  • Substitute flour tortillas with corn tortillas for a gluten-free option.
